Chicken and Waffles Makeover

Okay, a coworker of mine told me she was having chicken and waffles for MLK Day. I thought it sounded so good. Unfortunately, I am watching my calories again, and fried chicken and waffles smothered in butter and maple syrup don't exactly scream "Eat me, dieter!" So I thought, makeover chicken and waffles. Here is what we had...

Honey Breaded Chicken Strips (Baked) and banana pancakes for me, real waffles for the kiddos and hubs.
 



Honey Breaded Chicken Strips
2 tbsp. Honey
1 egg
dash of water just to loosen things up
2 tsp salt
1 tsp pepper
2 tsp paprika
1/2 cup flour
1 cup Panko bread crumbs
1.5 lbs chicken breast
Directions:
Mix honey, egg, water, salt, pepper and paprika in a bowl with a whisk. Cut chicken into strips and add to liquid. Stir until coated. Add flour to a new bowl. Place coated chicken into flour and stir to coat. Remove from flour, place chicken back into liquid mixture. Coat chicken in liquid a second time. Remove excess flour from bowl, and replace with bread crumbs. Add chicken to bread crumbs one at a time, and coat evenly. Place on a greased cookie sheet. I preheat the oven to 475, but kick it back to 350 once I put the nuggets in the oven. I then bake for 10 minutes on the first side, flip and bake an additional 10 minutes.

Banana Pancakes were a Pinterest find. The Pin sent me here . They were okay, probably alot better when you don't burn them. I did. They tasted like burned banana flavored fried eggs to me. Maybe I will try again sometime, but now anytime soon.

Grandma's waffle iron!

Waffles were from one of those Baking Biscuit Mixes. I am sure they were amazing because my darling son ate his in four bites.
 Four monstrous bites. A oversight on my part when I deviated from the menu plan was the fact we had no syrup. I subbed with some honey and powdered sugar. No one seemed to mind.
