Pinspired- Pancake Muffins

This is another wonderful Pinterest idea. Use your favorite pancake mix. Pour into mini muffins tins. Top with yummy toppings and bake. Not only do the pancakes all turn out the same, but you don't have to cook them at different times or watch your family eat theirs while you cook yours. No more pancake breakfast in shifts!!!
Ingredients:
Favorite Pancake Mix- prepared according to package directions (not the baking part- obviously)
Toppings- Chocolate chips, raisins and cinnamon, dried berries, crumbled bacon or sausage... the options are only limited to your imagination.

Directions- Bake at 350 for 12-14 minutes in a mini muffins tin

  1. Made these today and my son couldn't stop gobbling them up! Wonderful idea. Took me so much less time in the kitchen than actually pan frying each pancake and the taste was still great! I'm trying it with Red Velvet pancake mix also!

    1. We love them! Keeps me out of the kitchen forever, and I actually get to eat breakfast with my family!! :) Tell me more about Red Velvet pancake mix. This sounds like something I need.

  2. sweet! been looking for these thnx hey what if you only have the regular sized muffin pan and cannot afford a new mini one... would the cook temp and time cange?

    1. Cook time would not need to change. I am not sure about the cook time. I would start with upping the time to 16-18 minutes, and check with a toothpick for done-ness.

  4. Epic pancake muffin fail!!!:-( :-( :-( tried these and they tasyed gross maybe i can try them with a mini pan when i gey paid since they were ment that way maybe they will taste better!:-)

  6. I tried them in the regular sized muffin tin this morning for myself, my boyfriend, and his mother, but I made the pancake batter from scratch. They were AMAZING! Instead of chocolate chips, we added strawberries and bananas, and with the extra strawberries and bananas that we chopped up but were not used, we added powdered sugar to and made it into a glaze. This recipe is definitely a keeper. :D

    Megan, for future reference, we did the 350 as the recipe calls for, and your time estimate for 16-18 minutes was perfect. We did it for 16 minutes, and it was great, but it also depends on the oven too.
